It should be possible with the premium version, and also in Fritz as Graham already mentioned, in two steps.
1. delete the games of player X from database A (*)
2. open database B and append the remaining A to B
(A itself will remain as it was after step 1)
*) in Fritz, this would be done by
1a. search for all the games of that player
1b. mark the complete search result
1c. delete
(and eventually, choose "Tools/Database/Remove deleted games" if you want to remove them physically. Otherwise they would remain and just be marked as deleted.)
