I came across a tool, chessvision.ai, that produces the FEN notation after scanning a chessboard image. Since I have only used it a few times I can only say, so far, so good and that it looks very promising.

I installed it as an extension to Mozilla Firefox on a PC. There are many other installations possible for all sorts of browsers and devices. It has an intuitive graphical interface and after looking at the tutorial and trying it out, I was able to use it in a short time. Basically, you activate the extension, scan the chess diagram, choose the side to move, click on copy to clipboard, then paste it to your document.
