Best GUI to create Polyglot book by hand?

I'd like to create a polyglot book of a Chessable course I'm doing. It'll require me to play through the variations and add each playable move to the book. What's the best GUI for doing this?

I always use WinBoard/XBoard for that. There you can add the moves to the book by playing them on the board, which makes it less error prone. (For me, at least.)

I use Polyglot Toletant to create Polyglot books:

You asked for a GUI, but isn't it faster to play all your variations with your favorite GUI and then import the PGN?
