Best GUI to create Polyglot book by hand?

I'd like to create a polyglot book of a Chessable course I'm doing. It'll require me to play through the variations and add each playable move to the book. What's the best GUI for doing this?

It's an interesting and laudable goal to solve such a problem but it isn't easy.

My first thoughts would be to train a neural network using games of players of known rating and look at the attributes of the move made and the alternatives.

From my experience with Monarch and Maverick, you should be able to get to about 2000 ELO with quiescent search, PST, killers, basic move ordering, and null move. The next big jumps are by adding passed-pawn detection, mobility and then Late Move Reduction. Each of these is worth 50 ELO to 100 ELO. ...

Delphi is doing quite well. It can now target Win32, Win64, MacOS, iOS, Android and Linux. There are even third-party frameworks that target the web. Hard to believe. The rating difference is >1500 ELO, so there is zero chance Stockfish 13 would draw 1 in 10 games. While not impossible, a computer at 1900 ELO will draw virtually zero games out of 1000 against Stockfish 13 running on a modern PC. I would imagine if you really did observe this it's a result of an opening book bug. Do you have a PGN of the games?
