evaluation that usually go up when you are winning

stockfish does not have this type of evaluation.

White is a full queen up but the evaluation at high depth almost does not go up.

records in evaluation
depth 1 13.30
depth 3 13.34
depth 11 13.42
depth 37 13.45

waiting from depth 11 to depth 37 to get an increase in the evaluation is a lot of time and if I did not knew better I could think that the position is a type of fortress by looking at stockfish's evaluation.

Are there strong chess engines without this type of evaluation when the evaluation usually go up when the side has material advantage.
Note that it is possible simply to add some small bonus for every pawn push by both sides(as long as there are some non blocked pawns) or every trade when one side has a big material advantage to force beheviour of increasing evaluation when one side has a big material advantage(big material advantage can be defined as at least a knight).

I mean that stockfish often does not have increasing number in the evaluation when it searches deeper.

I would like to see non increasing score mainly in fortress positions that are draws
and if I only look at the evaluation of stockfish I may suspect that even a line like 1.e4 Nf6 2.Qh5 is a draw because black does not make progress based on the numbers.
13.16/27 when the score at small depth is similiar.
later the score goes up but not by much and I have only 13.31/36

It seems that the evaluation of stockfish does not give bonus for black only for the fact that the side trade pieces or pawns or for the fact that the sides go forward with pawns for some reason.

Perhaps you should experiment with an (small) evaluation term for material advantage that is measured relative to the total material on the board, rather than being absolute.

Having queen odds at the start of the game would score lower than having a KQK endgame. This would encourage a side that is ahead to trade material.

Increasing evaluations is due to the search discovering new tactical combinations that win more and more material. Aside from the missing queen, this is the opening position. The search is spending so much of its tree just developing pieces that tactical combinations just don't show up immediately.

Instead, I would take an early mid-game position with lots of pieces remaining and remove the queen from there. I bet you would see an increasing evaluation in the search then.

Heh, wouldn't it be funny if the draw width of chess was so wide that if we had 31men tbs the position you posted turned out to be draw by best play? I think this hasn't been explored, like, that is the minimum material handicap that white needs to ensure a won game?

I would be shocked if, with best play, that a material advantage of any two pawns wasn't enough to guarantee a win for White. One pawn might even be sufficient, but probably not and it would depend on the pawn.

It's possible 3 pawns (or a minor piece) is the minimum. I've seen middle game positions where the best a side can achieve is two pawns advantage, and it leads to a drawn 7men tablebase endgame, so with two pawns advantage the winning side should use it to expland it (win the third pawn, or force an exchange to be a minor piece up), because there's incredible defensive resources in some positions.

If two is enough they'd probably need to be the a and b pawns, or the g and h pawns, with the idea that the winning side starts with an unopposed passed pawn that is enough to win.

Stockfish has various “winning” scores hat it gives itself when it is well ahead. To see what that means, take a large number of Stockfish annotated games and plot a histogram of all possible evaluations. You’ll find various peaks with nothing in between at both ends of the scale. Last time I tried this there were three winning evaluation peaks at each end of the scale.
