The Installation Wizard button on the Details tab of the Engine Management dialog is supposed to do what you are looking for. It lets you select a folder, and then imports engines contained within that folder and its subfolders.

Nice to see a new version of Arena. I thought it was a dead project. I like the improved PGN handling.
